It’s Easy Being Green: 3 Pesto Party Pleasers

Easy make ahead dishes that are light, bright, and crowd pleasers should be part of every cook’s arsenal.  Pestos are exactly that: a simple pureed or mashed up combination of herbs or veggies, citrus, some kind of cheese and a nut to give it taste, texture, and thicken it up into a paste.

While I love a traditional Italian pesto with pine nuts, basil, parmesan cheese, lemon, and olive oil, pestos can be so much more. They can have different textures and citrusy tastes, they can even be made a little more healthy (meaning less olive oil and cheese and the addition of other veggies), and, most importantly, they help create dishes that make eating our daily greens a little more delicious.

These variations on the classic make mid week meals easier to get on the table, gussy up boring breakfasts and snacks, and are perfect ways to sneak super foods to our little ones (and big ones who convince themselves kale is disgusting).
