Cast-iron cooking is one of the oldest and best ways to make your favorite comfort foods. Favored among chefs and serious cooks for its reliability and the way the cast-iron skillet maintains heat and cooks through food (not to mention it’s cheaper than other pans and lasts longer), it perfectly sears meats, crisps potatoes, and puffs up sweets and breads.With so many different types of shiny steel and aluminum cookware to choose from, some new cooks are intimidated by these heavy, pioneer-ish looking pieces, and we want to change that. Truly, cupboard space is precious, and all you really need is a cast-iron skillet.
