Technicolor Funfetti Ice Cream Sandwich

We’re bringing the ice cream sandwich back into our lives with semi-homemade ideas that are easy make-ahead show stoppers. Funfetti can make anyone happy, so when we were thinking about how to make the most colorful, deliciously simple recipe, we knew Funfetti had to be involved. Here we use simple vanilla or chocolate ice cream in the middle, with colorful pink sprinkles (because why not!), but feel free to do YOU, with flavor and color combinations to match your mood.

  • 1 box of Pillsbury Funfetti cake mix
  • 1 pint (14 oz.) Haagen Dazz chocolate or vanilla ice cream (or both)
  • colorful sprinkles
  1. Prepare the Funfetti cookies based on the cake box’s instructions. Be sure to make according to the cookie recipe, not the cake recipe.
  2. Prepare 2-inch ball of dough and flatten onto the sheet pan (these should yield 4-inch cookies). Bake cookies, allow to cool and set aside.
  3. Meanwhile prepare a baking pan or large platter with parchment paper.
  4. Once cookies have cooled and you’re ready to assemble sandwiches, take ice cream out of the freezer to prepare the ice cream slices.  Working quickly, take ice cream out of the freezer and using a sharp chef’s knife (serrated or otherwise), starting from the bottom of the carton, cut vertically across into “slices”, about 2 inches deep. This will give you a round 2-inch deep slice of ice cream that will still have a slice of the cardboard from the carton around it. Cut the cardboard off with kitchen scissors, peel off carton piece and set on parchment paper. Repeat for another 4 discs and place on parchment (this should give you 5 sandwich slices). Put back into freezer for 5 minutes.
  5. Make the sandwiches by putting ice cream in between two cookies. You can put the sprinkle sides on now or wait until right before serving. Put sprinkles on a large plate. Roll each sandwich along the sprinkles to cover the sides. Alternate with different colors for more technicolor fun.
