Peanut Butter Marshmallow Fudge Bites

Fudge is easy and simple but still impresses even the savviest of cooks. And you can make these peanut butter marshmallow fudge bites ahead of time, in bulk. Portion them out as small dessert or take home gift for the end of a night. Or keep ’em for yourself for a perfectly portioned treat. Go on, pop 2, we won’t tell!

  • 3 Tbsp. unsalted butter
  • 2 cups marshmallows
  • 1 cup evaporated milk
  • 1 cup sugar
  • 2 cups semi-sweet chocolate chips
  • ½ cup peanut butter chips
  1. In a small saucepan, heat butter until it begins to melt. Add in the marshmallows and stir with wooden spoon until it forms a silky-creamy texture, about 2 minutes.
  2. Then add in the evaporated milk and sugar. Over medium/low heat, continue stirring for 5-7 minutes. The base should thicken to a nice consistency. Make sure you are scraping the bottom of the pan as you stir so there are no sugar crystals that burn to the bottom.
  3. Once it’s reached a thick consistency, take off the heat, add in the chocolate chips and stir until all have melted and its a smooth, rich thickness.
  4. Spray a 9 x 9 baking dish or a medium-sized flat based dish with cooking spray, and then pour fudge into it, making it sure it is an even thickness across. Sprinkle with peanut butter chips and then refrigerate or freeze until its formed a hard consistency, about 3 hours or over night.
  5. Using a rounded tablespoon or small ice cream scoop, scoop our round fudge bites. Place on a platter and keep refrigerated until ready to serve.
