Chia seeds are little pieces of magic: They pack a big punch of Omega 3s and other great vitamins and become gelatinous when combined with a liquid and allowed to rest for a couple of hours. We love to use chia seeds in our favorite French, no bake, no fuss desserts -mousse! We love this dessert for easy spring entertaining.

Ingredients
- ¼ cup chia seeds, ground in a food processor into a powder
- 4 cups fresh mixed berries: combination of strawberries, blueberries, and raspberries or two 10-ounce bags of mixed berries
- ¾ cup sugar
- 2 large egg whites, at room temperature
- 1 cup heavy cream
- To Garnish: Raspberries, Blueberries, and/or Cool Whip
Let's go
- In a food processor, grind the chia seeds until they form a powder.
- In a blender, puree 4 cups of the mixed berries raspberries with ½ cup of the sugar – add in ¼ cup of the chia seed powder and blend further until incorporated. Strain the purée into a bowl through a fine sieve.
- In a large bowl set over a pot of simmering water, whisk the egg whites with the remaining ¼ cup of sugar until warm to the touch. Remove the bowl from the heat. Using a handheld electric mixer, beat the whites at medium-high speed until stiff and glossy. Fold the egg whites into the puree.
- In the same bowl you used for the egg whites, beat the cream until firm. Fold the whipped cream into the raspberry mixture.
- In a small bowl, coarsely mash the remaining 1 cup of berries (this is optional). Fold them into the mousse. Scoop the mousse into 8 bowls and refrigerate until set, overnight.
- Garnish with whipped cream, cool whip, or just a couple of blueberries or raspberries.
