Frozen Tequila Coconut Slushy with a Muddled Fruit Floater

This refreshing, smoothie-like cocktail is made with all fresh fruit and 100% fruit juice, so it’s like you’re on Spring Break, but without the sugar headache you usually get from frozen cocktails. We love the muddled fruit floater because it’s pretty and the chunks that end up in each sip of the drink are a nice little treat. We love to use mango when its fresh and seasonal, but any kind of fruit would be delicious. Try pear, peach, or plum.

Ingredients
  • 12 oz. tequila + a dash for the fruit floater
  • ½ cup light coconut milk
  • ½ cup 100% fruit juice (based on your fruit floater, we use mango)
  • 1 cup ice cubes
  • ½ lime, juiced
  • ½ muddled fresh fruit, we use mango
  • mint, for garnish
  1. Place all ingredients except the fruit into a blender.
  2. Blend thoroughly.
  3. Pour into a glass.
  4. Peel the fruit. Muddle ½ of the fruit. Put in a dash of tequila, depending on preference.
  5. Top the slushy with the muddled fruit. Garnish with mint and straw.
