Goji Berry Date Bites

Goji Berries are suspicious little pink guys that are dried and packaged in your grocer’s specialty section. We’re crushing on their colorful complexion and everything else they do for us: they’re great for your eye and kidney health, provide energy, and, even though they’re sweet, they won’t give you a total sugar crash. These energy bites are rocking goji, coconut, oats, and dates – a super combination of superfoods. They take 5 minutes to make and keep for weeks. So you can make these and pop them out when you’re in need of a sweet energy burst.

Ingredients
  • 1 cup almond butter
  • 1/2 cup dried coconut flakes
  • 3 Tbsp. agave syrup
  • 1/2 cup dates
  • 1 cup goji berries
  • 1 cup oats, we used Bob Mills Gluten Free Oats
  1. In a food processor, combine all ingredients and pulse for 30 seconds until a chunky crumb like mixture forms.
  2. Form 1-inch balls, refrigerate for 30 minutes.

**Balls can be made and stored in an air tight container in the refrigerator for 2 weeks.
