Spicy Mango Avocado Salsa

We love a sweet and savory dip or topping. This mango salsa is refreshing and citrus-o-licious, perfect for fish, grilled meats, or on its own with chips or crudite.

Ingredients
  • 1 ½ cups mango (We use frozen when they are not in season)
  • 1 avocado
  • 1 lime, juiced
  • ½ jalapeno, roughly chopped (keep seeds in if you want it extra spicy)
  • ¼ cup chopped scallions
  • 1 Tbsp. O&Co. Mandarin Orange Infused Oil (Or another oil with complimentary fruit flavors like coconut oil)
  • 1 Tbsp. rice vinegar
  • 1 tsp. Sriracha
  • salt and pepper to taste
  1. Chop mango and avocado into small, ½-inch pieces. Place into a bowl and mix with the remaining ingredients.
  2. Season with salt and pepper. Serve immediately or refrigerate for up to 1 hour. If making ahead, do not cut up avocado until you’re ready to serve. Beware, mangos will change color slightly as the salsa sits for a couple of hours.
