We’re big believers in the quesadilla. They’re the perfect party appetizer — easy to make, easy to serve, and who doesn’t like a dang quesadilla? This “Reuben” quesadilla is a play on the old timer, made with a twist by adding apples and a sweet and creamy honey mustard sauce. Your friends will be asking for seconds, so buy some extra pastrami, yo! Okay, that was creepy.
Hey Reuben! It’s a Reuben Quesadilla with Homemade Honey Mustard

Ingredients
- 2 large round tortillas or 4 small round tortillas
- ½ cup shredded swiss cheese or 5 slices of swiss cheese
- 6 slices of pastrami (add or subtract based on your meat preferences)
- 1/2 apple, we prefer green but any will do, peeled and thinly sliced
- 2 Tbsp. sauerkraut
- Dipping Sauce: Honey Mustard Dipping Sauce
- 3 Tbsp. spicy mustard
- 1 Tbsp. honey
- 2 Tbsp. fat free Greek yogurt
- salt to taste
Let's go
- Preheat oven to 400°F.
- In a small bowl, mix all of the homemade honey mustard ingredients and set aside until ready to serve.
- On a baking sheet, covered in foil, place your tortillas down, then place your ingredients as followed: 3 slices of cheese (or half the shredded), pastrami, sauerkraut, apples, and then top with additional 3 slices of cheese. Top with the remaining tortilla and bake for 7-10 minutes, until you see the cheese start to bubble on the sides. Take out, cut into wedges and serve immediately with dipping sauce.
