Edamame and Pea Dip

This edamame and pea dip might save you from your never-ending cycle of hummus-eating. It’s just as yummus and a good way to mix things up.

Ingredients
  • 1 cup frozen shelled edamame
  • 1 cup frozen peas
  • 1/3 cup tahini
  • 3 Tbsp. lemon juice
  • 2 Tbsp. olive oil
  • 1 tsp. salt
  • 3 Tbsp. water
  1. Boil the edamame in salted water until tender, then transfer to a colander
  2. Boil the peas in salted water until tender; then transfer to a colander
  3. In the bowl of the food processor, add edamame, peas, tahini, lemon juice, water. Mix and scrape down the sides as you do. Mix in the olive oil gradually.
  4. Serve with crudite or crackers.

Make and reserve this dip up to 2 days in advance, cover, and refrigerate until ready to serve.
