This edamame and pea dip might save you from your never-ending cycle of hummus-eating. It’s just as yummus and a good way to mix things up.
Edamame and Pea Dip
Ingredients
- 1 cup frozen shelled edamame
- 1 cup frozen peas
- 1/3 cup tahini
- 3 Tbsp. lemon juice
- 2 Tbsp. olive oil
- 1 tsp. salt
- 3 Tbsp. water
Let's go
- Boil the edamame in salted water until tender, then transfer to a colander
- Boil the peas in salted water until tender; then transfer to a colander
- In the bowl of the food processor, add edamame, peas, tahini, lemon juice, water. Mix and scrape down the sides as you do. Mix in the olive oil gradually.
- Serve with crudite or crackers.
Make and reserve this dip up to 2 days in advance, cover, and refrigerate until ready to serve.
