Spicy Mango Avocado Salsa

Ingredients
- 1 ½ cups mango (We use frozen when they are not in season)
- 1 avocado
- 1 lime, juiced
- ½ jalapeno, roughly chopped (keep seeds in if you want it extra spicy)
- ¼ cup chopped scallions
- 1 Tbsp. O&Co. Mandarin Orange Infused Oil (Or another oil with complimentary fruit flavors like coconut oil)
- 1 Tbsp. rice vinegar
- 1 tsp. Sriracha
- salt and pepper to taste
Let's go
- Chop mango and avocado into small, ½-inch pieces. Place into a bowl and mix with the remaining ingredients.
- Season with salt and pepper. Serve immediately or refrigerate for up to 1 hour. If making ahead, do not cut up avocado until you’re ready to serve. Beware, mangos will change color slightly as the salsa sits for a couple of hours.
