The Dude Diet’s Nutty Chocolate Brookies

Serena Wolf’s Dude Diet Cookbook is one of our favorite resources for clean, delicious food that tastes amazing and won’t break your calorie bank. These “brookies” are basically made of dreams, chewy, soft, nutty, chocolatey – without any refined flours, butter, or bad oils. So we can eat them all day every day, right?

Ingredients
  • ⅓ cup unsweetened 100% cocoa powder (not Dutch- process)
  • ½ cup pure cane sugar
  • 3 Tbsp. liquid extra-virgin coconut oil
  • 1 Tbsp. water
  • ½ tsp. pure vanilla extract
  • 1 large egg
  • ¼ cup whole wheat flour
  • ¼ tsp. fine- grain sea salt
  • ¼ tsp. baking soda
  • ¾ cup chopped walnuts or substitute in rice cereal to make this nut free
  • ¼ cup dark chocolate chips
  1. Preheat the oven to 350°F. Line a large baking sheet with parchment paper.
  2. In a medium bowl, combine the cocoa powder, sugar, coconut oil, water, and vanilla. Add the egg and stir vigorously until the batter becomes smooth and slightly shiny.
  3. In a separate bowl, whisk together the flour, salt, and baking soda. Add this mixture to the cocoa mixture and stir just until incorporated. Fold in the walnuts and chocolate chips, making sure everything is well combined.
  4. Scoop heaping tablespoons of the dough onto the prepared baking sheet, leaving about 2 inches between each one. You should have enough for exactly 12 brookies. (Rubbing your tablespoon with a little coconut oil before scooping the batter will make this process easier.) Using damp fingers, smooth the scoops around the edges if necessary to make sure your brookies come out round(ish).
  5. Bake for 11 minutes, or just until the brookies are set. Let cool on the baking sheet for 10 minutes. (You MUST wait the full 10 minutes, dudes. The brookies will be very soft coming out of the oven, and they need time to firm up.) Transfer to a wire rack to cool completely.
