The Dude Diet Big Pineapple Tortilla Pizza

Who doesn’t love a personal pizza? Serena Wolf’s The Dude Diet’s personal pan pizza is simple without the guilt of ordering a full pie for yourself (no judgement, we have all been there). Beware, others will want to share, so make two.

  • 2 slices turkey bacon
  • 2 tsp. extra- virgin olive oil
  • One 10-inch whole wheat tortilla or wrap
  • ¼ cup marinara sauce
  • ⅓ cup shredded part-skim mozzarella cheese
  • ¼ cup finely chopped pineapple
  • ¼ tsp. crushed
  • red pepper flakes (optional)
  • 3 fresh basil leaves, stacked, rolled, and thinly sliced (as in a chiffonade)
  1. Cook the turkey bacon in a skillet over medium heat until browned and crispy, about 4 minutes per side. Transfer to a paper towel–lined plate and let cool for 2 to 3 minutes, then chop into small pieces.
  2. Preheat the broiler on high.
  3. Heat a large ovenproof skillet over medium-high heat. When hot, add the olive oil and swirl to coat the bottom of the skillet. Place the tortilla in the skillet and cook for 30 seconds to 1 minute until it puffs up slightly and the underside is lightly browned.
  4. Reduce the heat to medium-low. Spread the marinara sauce on the tortilla in an even layer. Sprinkle with the cheese and top with chopped pineapple, the chopped, cooked turkey bacon, and red pepper flakes (if using).
  5. Transfer the skillet to the broiler and broil for 2 to 3 minutes until the cheese has melted and is bubbling, and the edges of the tortilla are dark brown. (Pay attention, dudes—things can go from brown to burnt very quickly!)
  6. Using oven mitts, remove the skillet from the broiler, loosen the bottom of the tortilla from the skillet with the tip of a knife, and slide it onto a cutting board. Sprinkle with the basil. Slice your ‘za into 6 triangles and get after it.
