Hot Halloumi Cheese &Tabouli Vegetarian Lettuce Wraps

Halloumi cheese has been sent down to us from the Greek Gods. It’s the perfectly salty & melty cheese for a stand alone course or a creative starter. These Mediterranean style lettuce wraps are a welcome addition to our appetizer entourage. I love the flavors together and the all my eaters love to experience melted cheese in new ways.

Ingredients
  • 1 package halloumi cheese, cubed into 3/4
  • 1/2 Tbsp. AP flour of our choice, for dusting cheese
  • 1 Tbsp. olive oil
  • 1 Tbsp. unsalted butter, cut into small cubes
  • Bibb lettuce or another fresh lettuce that can be used as wraps
  • Serve With Balsamic Tabouli Salad:
  • 1 cup fresh Italian parsley, chopped
  • 1 small cucumber, peeled, deseeded and diced into small 1/2
  • 2 large field tomatoes, deseeded and diced into small 1/2
  • 1 Tbsp. white balsamic vinegar or lemon, freshly squeezed + salt and pepper to taste
  • To Garnish and serve with:
  • Hummus
  • Pomegranite Seeds
  • Avocado
  • 1 cup cooked Quinoa {to make it a little more hearty}
  1. In a medium sized bowl, mix together all of the tabouli ingredients. Add in the white balsamic  vinegar or lemon juice, taste, and  then season with salt and pepper as desired. Set aside.
  2. On a wooden cutting board, spread out the halloumi cheese cubes. Sprinkle with flour on coat on all sides.
  3. In a medium sized skillet, preferably a cast iron skillet, heat 1 Tbsp. oil and 1 – 2 cubes of the unsalted butter. Add in the cheese, working in batches if there are too many pieces. You don’t want to over crowd the skillet, as they won’t crisp up if the cheese is crammed in there. Add in more cubes of butter as needed.
  4. Once browned, with a slotted spoon, carefully take out and place on a paper towel.
  5. Serve immediately with tabouli, lettuce wraps, and garnishes.
