Healthy Chicken Curry & Coconut Ginger Grain Bowls

These bowls are the perfect weeknight treat or dinner party pleaser. Assemble the bowls or set out ingredients buffet-style for a choose-your-own-adventure!

Ingredients
  • Curry-Yogurt Chicken:
  • 1.75 lb. boneless, skinless chicken breasts
  • ⅓ cup fat free Greek yogurt
  • 2 Tbsp. curry powder
  • 1 tsp. freshly grated ginger
  • 1 large garlic clover, finely chopped
  • ½ lemon, zest and juice
  • 1 Tbsp. olive oil
  • 1 ½ tsp. salt
  • Coconut Ginger Grains:
  • 1 ½ cups dried grains or rice (such as basmati rice, quinoa, millet, barley, or a mixture)
  • 1 Tbsp. coconut butter or oil
  • 1 Tbsp. fresh ginger, roughly chopped
  • 1 Tbsp. shredded coconut
  • Freshly chopped cilantro or Scallions, for garnish
  • To Add To Your Bowl:
  • - Cumin-Chile Roasted Cauliflower {Link to recipe in instructions)
  • - Sweet and Smoky Glazed Carrots with Walnuts
  • - Avocado, diced into small pieces
  • - Yogurt Sauce, such as Tzaitziki ( Link to our homemade version in instructions)
  1. Preheat oven to 400° F.
  2. Cut chicken into 2-inch pieces. Set aside while you mix together all of the other ingredients in a bowl. Mix together until it forms a thick, yogurt marinade. Add in chicken. Marinate for 1 hour or overnight.
  3. Begin on the other bowl ingredients while the chicken marinates.
  4. Make the rice by boiling water with the grains, coconut butter or oil, and fresh ginger in a medium-sized saucepan. Once it comes to a boil, cover and turn to low. Allow to cook for another 15 minutes until all liquid is absorbed. Take off heat, taste and season, and set aside.
  5. Begin with the Cumin-Chile Roasted Cauliflower. Take out and reserve, covered, on the side until ready to serve.
  6. While the Cumin-Chile Roasted Cauliflower is roasting, start the Sweet & Smoky Glazed Carrots with Walnuts.
  7. While the carrots are on the stove cooking, get a baking dish ready for the chicken. Take a medium-sized baking dish, like a square glass Pyrex, and line it with aluminum foil, including all of the sides. This will help with cleanup.
  8. Turn the oven up to high broil (it should already be very hot from the cauliflower so this shouldn’t take long).
  9. Pop the chicken into the oven and cook for 10-12 minutes, until the tops are browned.
  10.  Cut up avocado and any other items you will be garnishing bowls with.
  11. Serve bowls already made or with all ingredients on the table for a DIY treat.
