Goat Cheese and Sundried Tomato Dip

This dip is full of yummy Italian flavors and oh-so-simple to prepare.

Ingredients
  • 8 oz. fresh goat cheese
  • 1 Tbsp. fresh basil (You can use dried basil, or dried oregano if you don't have fresh) + more for garnish
  • 1/3 cup oil-packed sundried tomatoes
  • crackers for serving
  1. Drain tomatoes and reserve 2 Tablespoons of oil.
  2. Add goat cheese, sundried tomatoes, and basil to food processor and pulse until smooth.
  3. Add in extra oil if dip is too thick.
  4. Sprinkle with extra fresh basil if you like.
  5. Serve with crackers.

Make this dip up to 1 day in advance, cover, refrigerate and serve cold or at room temperature.
