Creamy Goat Cheese Mashed Potatoes with Crispy Onions

Potatoes to the face. That’s our motto at every holiday. While there are tons of delicious, buttery, creamy versions of mashed Ps out there, we like to add goat cheese. It gives a little extra oomph without straying too far from the classics. Always add a crunch on top, like crispy fried onion rings, to really knock these guys out of the park.

  • 5 - 6 normal sized AP potatoes
  • 4 Tbsp. unsalted butter
  • 1 4-oz. package of goat cheese
  • 1½ Tbsp. salt
  • ¼ cup half and half
  • ½ cup fried onions (Yeah, we're talking the French's kind)
  1. Wash and peel potatoes. Cut into quarters and put into a medium-sized pot, covered in cold water.
  2. Heat water until it begins to simmer. Keep at a simmer and cook for 20 minutes, until the potatoes are fork tender. Do not cook in boiling water and do not over cook.
  3. Drain and transfer to a medium-sized bowl or the bowl of a stand mixer. Add in all the remaining ingredients, except the crispy onions. Beat on medium-low speed with the mixer for 5 minutes, stopping and scraping the bottom every so often. You want the potatoes to be completely smooth, with no chunks.
  4. Add to a casserole dish and reserve until serving. This can be made up to 3 days in advance.
  5. When ready to serve, top with crispy onions and pop into the oven and broil for 2 minutes.
